Fluffy soba noodles with spring cabbage and eggs

[Materials (for 1 person)]

Soba...for 1 person

Egg...1 piece

Spring cabbage...2 pieces

Water...350ml

Mentsuyu (3x concentrated)...50ml

Potato starch dissolved in water...about 1 tablespoon

[How to make]

1. Cut the cabbage into bite-sized pieces. Beat the eggs well.

2. Boil the soba.

3. Pour water into a pot and bring to a boil, then add the cabbage. When it becomes soft, add the mentsuyu and water-soluble potato starch and heat until it becomes thick.

4. Stir in the eggs and heat, stirring, until the eggs are cooked through. Add it to 2 and it's done!
